Rice Idli


Ingredients

  • Rice – 250g
  • White Urad dal – 125g
  • Fennel seeds – 50g
  • Salt – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Wash Urad dal, rice, fennel seeds cleanly and soak them with enough water for 5-6 hours
  2. Drain water from rice, urad dal, fennel seeds and keep aside
  3. Using mixer or grinder, grind urad dal, fennel seeds for about 2 minutes
  4. Then add 20 ml water and grind them, again add 20ml water and grind them again
  5. Repeat the process till it become fluffy batter consistency
  6. Transfer the urad dal paste into a bowl and keep aside
  7. Then add the soaked rice into the grinder and grind it for 2 minutes
  8. Once rice is dry grinned, add 50ml water and grind them again
  9. After 2 minutes, add 50ml water and grind them again
  10. Repeat the process till the batter become fluffy
  11. After that add urad dal batter into the grinder and grind with rice batter again
  12. Grind the batter till it starts bubbling
  13. Save the batter into a vessel and leave this batter for 9-10 hours for fermentation process
  14. Once fermentation process is over, the level of batter quantity will increase as twice as before and this is proper stage for making idlis
  15. Mix the batter well after the fermentation process
  16. Take enough amount of batter into another bowl, add a pinch of water and salt
  17. Mix it well till the batter the become smooth
  18. Take idli steamer vessel add enough water and boils it for 5-10 minutes
  19. Take the steamer’s idli plate which has idli molds and place a cloth all over the plate to avoid the absorbs water
  20. Then pour one big ladle of batter in each idli molds and close the lid
  21. Allow them to cook for 8-10 minutes in high steam temperature
  22. After that open the lid, just inserting a knife or fork at the center of the idli
  23. If the knife is clean means idli is cooked, if the batter comes with knife close the lid and cook for another few minutes till it doesn’t comes from knife
  24. Carefully take the idli plate outside and transfer the idli into a hot box
  25. Now the hot Rice idli is ready to server
  26. (Note) Want to more idli, remove the batter in the cloth and sprinkle some water, cook it

Aval Idli


Ingredients

  • Rice – 250g
  • Poha – 250g
  • White Urad dal – 50g
  • Fennel seeds – 50g
  • salt – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Wash Urad dal, rice, fennel seeds cleanly and soak them with enough water for 5-6 hours.
  2. Wash poha and soak them with water for 30 minute till it becomes puffy
  3. Drain water from rice, urad dal, fennel seeds and keep aside
  4. Using mixer or grinder, grind urad dal, fennel seeds for about 2 minutes
  5. Then add the soaked rice into the grinder and grind it for 2 minutes
  6. Once rice is dry grinned, add 50ml water and grind them again
  7. After 2 minutes, add 50ml water and grind them again
  8. Repeat the process till the batter become fluffy
  9. After that transferred into bowl and keep aside
  10. Grind the poha for 2 minutes and add 50ml water
  11. And grind till the poha batter become fluffy
  12. After that add rice batter into the grinder and grind with poha batter again
  13. Grind the batter till it starts bubbling
  14. Save the batter into a vessel and leave this batter for 9-10 hours for fermentation process
  15. Once fermentation process is over, the level of batter means the quantity will increase twicer than before and this is the proper stage for making idlis
  16. Mix the batter well after the fermentation process
  17. Take enough amount of batter into another bowl, add a pinch of water and salt
  18. Mix it well till the batter the become smooth
  19. Take idli steamer vessel then add enough water and boils it for 5-10 minutes

Pineapple Kesari – அன்னாசி பழ கேசரி


Ingredients

  • Semolina – 125g
  • Pineapple – 1
  • Cardamom powder – 1/4 tsp
  • Cardamom – 6
  • Kesari powder – 1 tsp
  • Cashew nuts – Required
  • Raisins – Required
  • Sugar – Required
  • Ghee – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Remove the skin of pineapple and cut them into small pieces and grind pineapple and keep aside
  2. Take a pan, heats up 2 tsp ghee, add cashew nuts till become golden
  3. After that add raisins and fry for 2 minutes till it swells up
  4. Then add rava and stir them well in low flame for 5 minutes
  5. Add pineapple and mix it well for 3 minutes continuously
  6. Then add 400ml water in rava and stir till continuously to smooth non sticky rava
  7. Stir continuously till the water starts boil and water drains out and make sure there is no lumps formed
  8. Once water is completely absorbed, the rava become big and smooth it means the rava is cooked well
  9. After that add sugar and stir continuously and make the sugar dissolve
  10. Stir continuously till rava absorb the sugar water completely
  11. After that add cardomom powder, kesari powder and mix it well
  12. Add 4 tsp ghee and stir it well then close the lid for 3 minute in low flame
  13. After that move the kesari into a bowl
  14. Now the tasty Pineapple kesari is ready for serve

Mango Kesari – மாம்பழ கேசரி


Ingredients

  • Semolina – 125g
  • Mango – 1
  • Cardamom powder – 1/4 tsp
  • Cardamom – 6
  • Kesari powder – 1 tsp
  • saffron – A pinch
  • Cashew nuts – Required
  • Raisins – Required
  • Sugar – Required
  • Ghee – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Remove the skin of mango and cut them into small pieces and blend them like a juice without water and keep aside
  2. Take a pan, heats up 2 tsp ghee, add cashew nuts till become golden
  3. After that add raisins and fry for 2 minutes till it swells up
  4. Then add rava and stir them well in low flame for 5 minutes
  5. Add Mango and mix it well for 3 minutes continuously
  6. Then add 300ml water in rava and stir till continuously to smooth non sticky rava
  7. Stir continuously till the water starts boil and water drains out and make sure there is no lumps formed
  8. Once water is completely absorbed, the rava become big and smooth it means the rava is cooked well
  9. After that add sugar and stir continuously and make the sugar dissolve
  10. Stir continuously till rava absorb the sugar water completely
  11. After that add cardamom powder, kesari powder and mix it well
  12. Add 4 tsp ghee and stir it well then close the lid for 3 minute in low flame
  13. After that move the kesari into a bowl and sprinkle saffron
  14. Now the tasty Mango kesari is ready for serve

Ragi Upma


Ingredients

  • Ragi – 250g
  • Urad dal – 1 tsp
  • Chana dal – 1 tsp
  • Red onion – 1
  • Tomato – 1
  • Carrot – 1
  • Green chillies – 4
  • Ginger – 1/2
  • Garlic – 6
  • Asafoetida – A pinch
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Lemon – 1
  • Curd – 80g
  • Coriander leaves – Few
  • Curry leaves – Few
  • Salt – Required
  • Oil – Required

How to Prepare

  1. Dry roast the ragi in low flame till raw smell goes off and keep aside
  2. Chop onions, chop tomatoes finely, grind ginger and garlic into paste, extract juice from lemon, slit green chillies, chop carrots, chop french beans chop coriander leaves and keep them aside separately
  3. Take a pan and heat 3 tsp oil then add mustard seeds, cumin seeds once it crackle add urad dal, chana dal, red chillies
  4. Once dals become golden, add onion and green chillies, curry leaves and fry them till become golden brown
  5. Then add tomato and turmeric powder, ginger garlic paste, asafoetida and saute till tomato become mushy
  6. Then add carrots and salt and saute them, close the lid and cook them for 5 minutes
  7. After that add lemon juice and stir them well for 2 minutes
  8. Pour 350 ml water and curd mix it well and boil for 5 minutes
  9. Then add ragi gradually and stir it well till water drains out
  10. Close the lid and allow them to cook in low flame for 5 minutes
  11. Turn off the flame, garnish with coriander leaves and transfer it into a plate
  12. Now the healthy Ragi Upma is ready for serve

Bread Upma


Ingredients

  • Bread – 10 slices
  • Urad dal – 1 tsp
  • Chana dal – 1 tsp
  • Red onion – 1
  • Tomato – 1
  • Carrot – 1
  • French beans – 6
  • Green chillies – 4
  • Ginger – 1/2
  • Garlic – 6
  • Tomato sauce – 2 tsp
  • Soya sauce – 2 tsp
  • Asafoetida – A pinch
  • Turmeric powder – 1 tsp
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Lemon – 1
  • Coriander leaves – Few
  • Curry leaves – Few

Rava Kesari – ரவா கேசரி

Milk Kesari – பால் கேசரி


Ingredients

  • Milk – 400ml
  • Semolina – 125g
  • Cardamom powder – 1/4 tsp

  • Raisins – Required
  • Sugar – Required
  • Ghee – Required

  10. After that add cardamom powder, kesari powder, again add 125g sugar and mix it well
  11. Add 4 tsp ghee and stir it continuously for 8 minutes in low flame
  12. After that move the kesari into a bowl
  13. Now the tasty Milk kesari is ready for serve

  • Green chillies – 4
  • Ginger – 1/2
  • Garlic cloves – 6
  • Asafoetida – A pinch
  • Turmeric powder – 1 tsp
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Coriander leaves – Few

Blood orange Lassi


Ingredients

  • Blood Orange – 1
  • Cardamom – 5
  • Fresh curd – 250ml
  • Ice cream – 2 scoop
