Kerala Style Sambar


Ingredients

  • Potato – 1
  • Carrots – 2
  • Drum sick – 1/2
  • Brinjal – 2
  • French Beans – 4
  • Toor dal – 250g
  • Asafoetida – A pinch
  • Red Chilli powder – 1 tsp
  • Turmeric powder – 1 tsp
  • Mustard seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Fennel seeds – 1 tsp
  • Small Onions – 3
  • Red Onion – 1
  • Tomato – 1
  • Tamarind – 1 lemon size
  • Asafoetida – A pinch
  • Coriander seeds – 1 tbsp
  • Fenugreek seeds – 1/4 tsp
  • Cumin seeds – 1 tsp
  • Red Chillies – 4
  • Turmeric powder – 1/4 tsp
  • Salt – Required
  • Coconut oil – Required
  • Curry leaves – Few
  • Coriander leaves – Few

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Add 100ml water and dissolve the tamarind ball using your hand, filter it, save the syrup and keep aside
  2. Cut onions in two pieces, slice the red onions vertically, chop garlic cloves, chop tomato and keep aside
  3. Take a pan, dry fry coriander seeds and fry them for 2 minutes and keep aside
  4. Fry Fenugreek seeds till it become browned and keep aside
  5. Now add and roast cumin seeds, 4 red chillies, 1/4 tsp turmeric powder and keep aside
  6. Take a grinder/mixer and add all roasted ingredients and grind them like a powder, this is the kerala sambar powder and save it in a bottle and keep aside
  7. Take a pan, heat 1 tbsp coconut oil and add cumin seeds, fennel seeds, fenugreek seeds, mustard seeds
  8. Wash and soak toor dal for 1 hour keep aside
  9. Cut carrots, beans, drumstick and keep aside, then peel the skin of potatoes and cut it like cubes
  10. Soak brinjal in salt water for 10 minutes and cut it like medium cubes and keep aside
  11. Take a pan, heats up with oil, add onions, green chillies, garlic for two minutes
  12. Then add toor dal, add carrots, beans, drumstick, brinjal, potato, salt
  13. Saute for 2 minutes then close the lid and cook it for 3 minutes
  14. After that open the lid and stir them well then add tarmind juice in it
  15. Then close the lid and cook it in low flame for 3 minutes
  16. After that open the lid, add coriander leaves, asafoetida then stir for 2 minutes and turn off the flame and keep aside
  17. Take another big pan, heats up with oil, add mustard seeds
  18. Once it crackle, add onions, red chillies, curry leaves, curry leaves
  19. Saute it for a minute then add coriander powder, red chilli powder, sambar powder and mix it well for 3 minutes
  20. Pour the prepared sambar into the mixture, and stir it well for 5 minutes
  21. Turn off the flame and stir it well till all mix well
  22. Now the traditional Kerala style sambar is ready for serve
