Mint Chutney – புதினா சட்னி


Ingredients

  • Mint leaves – 150g
  • Coriander leaves – 50g
  • Urad dal – 1 tbsp
  • Peppercorns – 3
  • Green Chillies – 2
  • Garlic clove – 1
  • Ginger – 1/8
  • Lemon – 1/4
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Asafoetida – A pinch
  • Curry leaves – Required
  • Oil – Required
  • Salt – Required

How to Prepare

Total Preparation Time: 10-20 minutes

  1. Squeeze lemon and take juice from it and keep aside
  2. Clean the mint leaves and coriander leaves in hot water, chop them finely, Grate ginger, chop the garlic and keep aside
  3. Take a pan, add some oil once oil heats up, add cumin seeds
  4. Once splutter, add urad dal then add 3 red chillies
  5. Once the dal become golden, add garlic, ginger, asafoetida, curry leaves, peppercorns
  6. Then add mint leaves, coriander leaves, lemon juice and saute for 6 minutes till leaves size is reduced
  7. Turn off the flame and make the oil fried ingredients cool down
  8. After cool down completely, add them to a blender
  9. Grind them well for 1 minutes in high speed after that add some salt
  10. Blend them like a paste and add another 100ml water
  11. Blend them for a minute till it reach the think water consistency, transferred into a bowl and keep aside
  12. Now a pan, heat 2 tsp oil afer that add mustard seeds
  13. Once mustard crackle, add 1/2 tsp urad dal, red chillies and curry leaves
  14. Fry it for 1 minutes, then add this tempering into the prepared mint chutney
  15. Now the delicious Mint Chutney is ready for serve
